The Perfect Father's Day Recipe by Reuben Riffel - Roasted T-bone steak with cafe de Paris

Roasted T-bone steak with cafe de Paris

 


INGREDIENTS

1.500g well aged T Bone steak (this goes without saying, dry aged steak will have more flavour)
2.salt and pepper
3.3a little oil

Cafe de Paris butter

  • 180 g butter
  • 1 tbsp caper berries
  • 1 garlic clove grated
  • 1 shallot chopped
  • 2 sprigs garden thyme, leaves
  • 1 teaspoon chopped rosemary
  • 12 taragon leaves
  • 2 tbsp chopped parsley
  • juice of 1 lemon
  • 1 tbsp Kerala spice (or garam masala)
  • salt and pepper
  • 2 tbsp Worcestershire sauce
  • 1 egg yolk
  • 1tbsp English mustard
  • 4 Anchovy fillets

 

METHOD


Blend together all the ingredients for the butter. Roll into greaseproof paper and foil. Keep in the fridge.

preheat your oven to 220 degrees Celsius
i used my thick based griddle pan ( it's important for good caramelisation that your pan can retain the heat) Cut into the fat of the T-bone, season thoroughly with salt and pepper
then brush the meat lightly with oil.
heat the pan to medium high. Place steak skin side down and start rendering out the fat. Adjust the temperature if it's too high and be patient at this stage. This can take up to 10 minutes depending on the thickness of the fat and makes a big difference in the flavour.

Remove some of the fat from the pan. Increase the heat and turn and grill on the sides for 3 mins per side.
Transfer to a cold roasting dish and place into the oven for 5 minutes and rest for 5 minutes.

I place it back into the oven for a minute or two to heat up and slice. Top with the butter and torch to melt.

Enjoy with a glass of Stellenzicht Tristone Cabernet Sauvignon.
