Heritage Month Recipe Series: Thunderstone Rosé & Strawberry Hertzoggies

The strawberry hertzoggies pair wonderfully with our Thunderstone Rosé because of its "strawberries and cream" flavour profile as well as it's beautiful, perfumy nose. Enjoy!
Strawberry Hertzoggies
Serves 12
Ingredients
¾ cup desiccated coconut
2 free-range eggs, separated.
5 T caster sugar
2 x 250 g sheets all-butter puff pastry, thawed.

Instructions
Preheat the oven to 180°C and grease or spray a muffin tray.
Using a cookie cutter, cut 12 rounds out of the pastry and place in the prepared muffin tray. Top each piece with a spoonful of jam.
Beat the egg whites until soft peaks are formed, add the caster sugar beat until the sugar is dissolved. At this stage it looks like a meringue.
Add the coconut and fold in.
Top each tart with a spoonful of coconut mixture.
Bake for 15–20 minutes, or until golden brown.
